Variety: Cabernet Franc in prevalence, with a secret variety. Unoaked. Serving temperature 14°C.

Cabernet Franc base blended with a fiercely protected secret variety preserved from an old, overlooked, unnamed vineyard on the estate that wouldn't be expected to produce anything of interest... The word “cucco” in Italian means “too old and quite insane”.

Bright, charming, purple colour. Very fruity and lively red, with no influence of oak or ageing aromas. On the palate it is young, clean, friendly and slightly sweet. Gently spicy with black pepper and cumin, then violets, pink roses and little red berry fruits, both on the nose as on the palate. Medium body, with refreshing acidity.

Food pairing: cold meats and charcuterie, mild to medium hard cheeses, pasta/pizza/starters with meat, poultry, grilled meat. If slightly chilled (10-12°C): shellfish, light or grilled fish.

Vegetarian: grilled veg, parmigiana aubergines, legumes, root veg, pasta/pizza.
